The red wine wassail over ice came to us by accident: after brewing too much of our favorite warm wine wassail one year, we stored it in the refrigerator and poured over ice the next day. Refreshing and beautiful to behold, the bitterness of wine is balanced with light sugar and fruit juice, with a finish of cloves and cinnamon.

Juice of two oranges
1/4 cup simple sugar syrup (optional, sweeten to taste)
